Categories vs Listings with search on site?

    How do categories and listings works, say for example, I’m using listings for all my sorting fields, am I able to use tags somehow with this section of the wordpress theme? (Auction Manager > Categories)

    I’m not using any categories, should I just delete as per the screenshot shows, all the categories, even sub-categories?

    As when i go to click search, all the Categories/Sub-Categories show up.
