Using Shop Theme as Quotation system rather than a shop

I have the Shop Theme installed and it works very well with the payment gateways I use. Instead of using shopper press as a shop I would rather use it as a catalog. Instead of customers buying a product and are directed to a payment gateway, I would prefer that they rather select the product/s and request a quotation for the selected products instead. Any help is much appreciated.
