Your Delivery Details in Check out – Shop Theme

When users go to purchase, they are asked to register which is good, once they’re registered, the next step is to enter Delivery Details, where in ‘members’ of admin is this address? Either does this address get sent to me as an email as ‘Email Assignment’ in ‘Email Manager’ doesn’t give me an option to allocate an email to be sent to me or the customer once a purchase is made.

I have set my site up with Paypal standard for now so i don’t need them to enter their delivery address twice, once for the webisite and again on the Paypal checkout. Where can i limit fields in ‘Your Delivery Details’ to only show ‘Country’ and ‘State’ not Address 1 etc..
