Responsive format issues

Two questions…I’ve looked for answers throughout the forum but haven’t fount the answers.

1) Why is my menu disappearing on my iPhone when i turn it to landscape? Additionally when in portrait view the menu shows and all the main (top level) options are there and the ones with sub levels have a plus next to them but aren’t dropping down. I sent in a ticket but Zarko just said this is how it is. I find it hard to believe their is no way to have a menu when in landscape????

2) My site looks out of sort on tablets 7″ and larger. Basically once it starts to look like the desktop view just scrunched up it throws stuff out of wack. is their any way to change the code so that the site is only responsive on smaller devices and once it gets to tablets the responsive is off??
