Multi Taxonomy Selection

I am trying to make a custom field / taxonomy so that in the ‘Add Listing’ it can be a multiple selection option but within the search fields i want it to be a single option. The only way i can find a way for this to work is ‘categories’. When using taxonomy i can only got it working the other way. Does any one have any advice?
