   I am looking to modify the email that are normally sent out, new order and after payment specifically

   The only document I could find is http://www.premiumpress.com/tutorial/email-shortcodes/

   however it does not contian the short codes needed to define a new order

   for example:

   order ID, items orders, product descriptions, price, shipping tax, etc.

   are theses shortcodes available? are they defined anywhere?

   I am looking for the same information. Can someone help us get the order ID and other information in the e-mail template? The (data) shortcode does not provide this.

   (data) gets the whole lot

   there isnt any shortcodes to extract the different areas but you can use the POST values such as.

   (orderid)
